This course is the essential training ground for would-be chefs. You will study in our industry-standard training kitchens, which also serve on on-campus restaurant, The Chef's Hat. Our restaurant is also open to the public, giving you essential work experience that employers look for. Using the highest quality ingredients you will prepare complex meat, fish (including shell fish), poultry and vegetable dishes, as well as desserts, cakes and biscuits. The course also covers the preparation of soups, hot and cold sauces and pasta dishes. You will also cover three mandatory awards: Health & Safety, Food Safety and Working Relationships. You will produce a portfolio of evidence to show your progress. There are also test throughout the course to assess your theoretical knowledge. You will be assessed through real work experience in our commercial and training restaurant - The Chef's Hat. There are a variety of career opportunities available to successful students. These include chefs in hotels, cooks in hospital and similar kitchens, patisseries and cake decorators. There are a variety of other employment opportunities such as research and development, food representatives and the hygiene industry.
